
It's not what you know, it's who you know. Chefs have visited us in Casa Mariposa a few times and they wanted to plan our meals. Guests like this are always welcome in our treehouse! This recipe is easy - assemble and enjoy.
Ingredients:
lettuce, coarsely chopped
papayas or mangos, sliced thinly
diced lime
cilantro, chopped
green onions, sliced
cooked chicken, shredded
fresh mint leaves
shredded carrot
red pepper, thinly sliced
soy sauce
peanut butter or peanut sauce
rice paper, 3 sheets per person
Directions:
1. Cook and shred the chicken
2. Slice the fruit, vegetables and herbs
3. Dip 1 piece of rice paper into just-boiled water for 1 minute to soften
4. Add lettuce, papaya, lime, cilantro, onion, chicken, mint, carrot and pepper onto each rice paper
5. Drizzle soy sauce
6. Wrap the rice paper like a taco, closing sides so filling doesn't escape
7. Serve with a side of 1 TB of peanut butter
